Almond Butter Chocolate Chip Cookies: A Gluten-Free Delight

by Judy Goudy

The first time I made these cookies, it was a rainy afternoon, and I wanted something cozy to share with my family. My sister, who’s gluten-free, usually skips dessert, but not this time.

One bite in, she couldn’t stop smiling. That’s when I realized these cookies weren’t just a treat—they were a way to bring everyone together, no matter their diet.

Tips

  • Almond Butter Choice: Using a no-stir almond butter can make mixing easier and ensure consistent results.
  • Add-Ins: Feel free to mix in chopped nuts, dried fruit, or even a sprinkle of sea salt on top before baking for added flavor and texture.

Variations

  • Nut-Free Option: Substitute almond butter with sunflower seed butter for a nut-free version.
  • Vegan Adaptation: Replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water) to make the cookies vegan.

Serving Suggestions

Arrange these cookies on a rustic wooden platter for a cozy presentation. Pair them with a glass of cold almond milk or a warm cup of tea. They’re perfect for sharing at gatherings or as a thoughtful homemade gift.

Enjoy baking and sharing these cookies with your loved ones!

Description

Soft and chewy gluten-free cookies made with almond butter and studded with chocolate chips. A delightful treat for all to enjoy.

Ingredients

Scale
  • 1 cup almond butter (preferably unsalted and smooth)
  • 3/4 cup packed light brown sugar
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup semisweet chocolate chips

Instructions

  • Preheat and Prep: Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix the Dough: In a bowl, combine the almond butter, brown sugar, egg, baking soda, and vanilla extract. Stir until the mixture is smooth and everything’s well blended.
  • Add Chocolate Chips: Gently fold in the chocolate chips, making sure they’re evenly distributed.
  • Shape the Cookies: Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, leaving about 2 inches between each.
  • Flatten Slightly: Use the back of a spoon to gently press down each dough ball to flatten it a bit.
  • Bake: Place the baking sheet in the oven and bake for 8-10 minutes, or until the cookies are set and the edges are lightly golden.
  • Cool: Once done, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Ensure all ingredients are at room temperature for easier mixing. Store cookies in an airtight container to maintain freshness.
