Description

Ingredients

  • 2 ½ cups gluten-free all-purpose flour (with xanthan gum)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup packed dark brown sugar
  • 1 large egg
  • ½ cup molasses
  • 1 teaspoon pure vanilla extract
  • Optional: gluten-free icing for decoration

Instructions

  • Prep and Mix Dry Ingredients
    In a medium bowl, whisk together the gluten-free flour, baking soda, baking powder, ginger, cinnamon, cloves, nutmeg, and salt. Set aside.
  • Cream Butter and Sugar
    In a large bowl, beat the butter and brown sugar with an electric mixer until light and fluffy (about 2 minutes). Add the egg, molasses, and vanilla, and mix until well combined.
  • Combine Wet and Dry
    Gradually add the dry ingredients to the wet mixture, mixing on low speed until a soft dough forms. Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 2 hours (or overnight).
  • Roll and Cut

  • Bake
    Place the cookies about 1 inch apart on the prepared baking sheets. Bake for 8–10 minutes, or until the edges are firm but the centers look slightly soft. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
