This Gluten Free Triple Berry Cobbler is sweet, juicy, and packed with fresh strawberries, raspberries, and blueberries. Ingredients

For the Berry Filling:

  • 2 cups fresh strawberries, hulled and sliced

  • 2 cups fresh raspberries

  • 1 cup fresh blueberries

  • 1 cup granulated sugar

  • 3 tablespoons cornstarch

  • 1 tablespoon fresh lemon juice

  • For the Biscuit Topping:

  • 1 cup rice flour

  • 1/4 cup tapioca starch

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 4 tablespoons unsalted butter, softened

  • 3/4 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 3/4 cup buttermilk


Instructions

  1. Preheat the Oven:
