Description
These fudgy, chocolate-packed brownies are loaded with fiber and omega-3s, making them a delicious and nutritious treat. Gluten-free, with a vegan option!
Ingredients
- 1 cup almond flour
- 1/3 cup ground flaxseed
- 1/4 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs (or flax eggs for vegan)
- 1/2 cup coconut sugar
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1/3 cup dark chocolate chips (plus extra for topping)
Instructions
- Prep the oven & pan
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or grease it lightly. - Mix dry ingredients
In a large bowl, whisk together the almond flour, ground flaxseed, cocoa powder, baking soda, and salt. Make sure there are no clumps! - Combine wet ingredients
In a separate bowl, beat the eggs, then add in the coconut sugar, melted coconut oil, and vanilla extract. Mix until smooth. - Bring it together
Slowly pour the wet ingredients into the dry mixture, stirring gently until just combined. Don’t overmix! Fold in the dark chocolate chips. - Bake it up
Pour the batter into your prepared baking dish. Sprinkle a few more chocolate chips on top for that extra touch. Bake for 20–25 minutes or until a toothpick inserted in the center comes out mostly clean (a few crumbs are okay—you want them fudgy!). - Cool & slice
Let the brownies cool in the pan for about 10 minutes before transferring them to a wire rack. Slice into 12 squares and get ready to indulge.
Notes
Use flax eggs for a vegan version. Add a handful of walnuts for a crunchy texture.
